Minced Beef Tacos
Serving: 12 tacos.
Preparation: 10 minutes. Cooking: 5 minutes.
1 packet Indian Chicken Curry Spice Paste
450g beef, minced
90g lettuce, thinly sliced
60g capsicum, coarsely chopped
12 taco shells (warm according to pack instructions)
1 medium onion, coarsely chopped
1 medium tomato, coarsely chopped
Avocado Topping (Optional)
1 ripe avocado
1 tbsp chopped fresh parsley
1/2 cup (110ml) salad cream or thickened cream
1 tbsp lemon juice
Heat oil in a pan or wok on medium heat. Add onion, Spice
Paste and beef; stir-fry for 3 minutes or until cooked. Leave
Mix capsicum, tomato and lettuce into beef mixture. Portion
the mixture into 12 and spoon mixture into each taco shell.
Top each taco with a spoonful of avocado topping.
To make avocado topping:
Scoop avocado flesh into a bowl and mash finely. Mix with
cream, lemon juice and parsley.
If a non-stick pan is used, heat Spice Paste on medium low heat before adding onion and beef.
