Preparation: 25 minutes.

1 packet Powder Mix for Peanut Sauce, prepare according
to instruction on pack
250g (8.8 oz) Rice paper
350g Cooked prawns, sliced halves
60 g (2 oz) Bean vermicelli
Carrot sticks
Cucumber sticks
Lettuce leaves
Fresh Coriander or Parsley as garnish

Soak bean vermicelli in hot water for 10 minutes, drain off
water and set aside for use.
Soak the rice paper in warm water for 20 seconds and
place on a clean towel to absorb excess moisture.
Place a sheet of rice paper on a working surface and top
with all ingredients. Tuck the ends and roll lightly.
Serve immediately with prepared peanut sauce.
